Ingredients for Chicken and Hashbrown Casserole
Simple ingredients – you can use a rotisserie chicken to make it easier – then add in veggies, potatoes and some saucy sauce! Here’s what you need:
- Rotisserie Chicken – you can also cook a whole chicken in your crock pot if you like but a rotisserie chicken is so easy to use!
- Frozen Hash Brown Potatoes – you don’t need to thaw these – but you can if you want – either will work just fine
- Frozen Mixed Vegetables – peas/carrots/green beans
- Cream of Mushroom and Cream of Chicken Soup – I love Cream of Mushroom but had one of each so I used both!
- Sour Cream – you could swap Greek Yogurt if you like
- Seasoning Salt & Black Pepper
- Ritz Crackers – I love the Ritz cracker topping on this casserole but you could use potato chips or corn flakes
- Melted Butter – salted butter is fine for this one

Recipe Variations
I actually was going to leave the veggies out when I thought up the recipe but then decided a one pan dish is always helpful. That said – here are some options if you’d like to change it up:
- Cheese – I kind of like that this casserole is cheese-free – but you could easily add mozzarella or cheddar cheese!
- Bacon – add some crumbled bacon with the chicken for a smoky bonus
- Seasonings – I like to go fairly mild with seasonings but you can add onion powder, garlic powder or even ranch dressing mix!
- Veggie Swap – I went with a bag of mixed veggies but you could easily use broccoli, cauliflower or add sauteed mushrooms and onions!

How to make Chicken Hash Brown Casserole recipe
Chicken & Hash Brown Casserole is so easy to make! I started with my uber-simple Chicken Casserole and added potatoes & veggies. Let’s do this:
- Preheat oven to 350º
- Spray nonstick cooking spray in 9×13 baking dish
- Spread cooked chicken across bottom of dish
- Sprinkle mixed vegetables on top of chicken
- In a large bowl, stir together soups, sour cream, seasoning salt and pepper. Fold in frozen hash browns and spoon mixture over chicken and veggies.
- Crumble Ritz crackers over top of the casserole.
- Pour melted butter over top of crackers
- Place casserole dish in oven and bake for 40 minutes
- Remove and serve with a garnish of chives or green onion

Tips, Tricks & FAQs
Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week. You can freeze up to three months. I prefer to reheat in the oven or the air fryer so the crackers get crispy again. The oven would take 20-25 minutes and the 35º in the air fryer for 10 minutes.
I saw a TikTok video that you put your warm chicken right from the store in a ziploc bag then massage it. Just start rubbing and the meat comes off! Then you just pull out the bones and skin. It worked great!!!! Much easier than picking it all off!

8×8 seems kind of small for 4 to 5 cups of chicken plus 30 oz of hashbrowns. Will 9×13 work better? If use 9×13 same amount of cooking time?
I used a rectangular dish that was about equivalent to 8×8 and yes – i think 9×13 would be great – a little roomier. ๐ Shouldn’t change the time at all.

would cream cheese work in place of sour cream?
yes – but maybe add 1/4 cup milk to make it a little creamier – its not going to stir in like sour cream so i would dice it and then maybe stir the casserole before eating
