Roasted Garlic is great – but Smoked Garlic takes it to the next level! Smoking gets the garlic soft and smooth, with a mellow flavor – but also adds that touch of smoke that any smoker fan will love!

Smoked Roasted Garlic Ingredients
Mmmm – roasted garlic is an easy thing to make that adds so much flavor to many dishes. Here’s what you’ll need:
- Heads of Garlic – Garlic is super cheap so if you’re going to freeze the roasted cloves – go ahead and do 3-4 bulbs!
- Olive Oil – you could also use avocado oil – you want an oil with some flavor
- Salt & Pepper – a sprinkle of the cloves before you smoke! I like to use fresh cracked black pepper.

How to Smoke Garlic on the Traeger
You’ll need a couple of hours on the smoker – so next time you’re smoking a delicious pork loin – throw some garlic on and you’ll have it for later!
- PREHEAT: Preheat Traeger to 225º
- PREP: Take the whole head of garlic and, using a sharp knife, cut off the top of the whole bulb so each of the cloves in their paper are “exposed”. Put the cut bulbs, exposed side up, into a disposable aluminum foil pan (or baking sheets). Drizzle olive oil, salt and pepper over the garlic bulbs.
- SMOKE: Place pan onto Traeger for 2 hours. You’ll know the bulbs are done if they’re soft when you poke them with a knife.
- SERVE: Remove from smoker and squeeze the bulb of garlic to push the cloves out of their little sleeves – or you can use a small fork to pull the soft cloves out.

Uses for Roasted Garlic
This smoked garlic recipe is very easy – but what do you do with the roasted garlic once you have it? Bring it to room temperature when you get ready to use it – and here are my favorite ways to use it:
- Pasta Dishes – add roasted garlic to my Baked Feta Pasta with Chicken, Pesto Pasta with Tomatoes or Olive Garden Meaty Pasta Sauce
- Toasted Bread – ramp up your garlic bread with roasted garlic
- Pizza – roasted garlic is a delicious mellow flavor that is amazing on smoked pizza
- Vegetable Side Dishes enhance dishes like Smoked Green Beans with Bacon or Herb Roasted Potatoes
- Salad Dressing – add to Italian Dressing or Greek Dressing for an added layer of flavor

Tips, Tricks & FAQs
Yes – you can make it in the air fryer or the oven. In the oven, roast at 400º for 35-40 minutes.
There are many flavors of wood pellets that work in your pellet smoker. I keep it simple and always use the Traeger Signature Blend which is a blend of Maple and Cherry. That said if you’re looking for something specific for garlic – the best are Hickory, Mesquite & Pecan. The garlic can handle the stronger pellet woods.
Wood chips – Soak them in water for 30 minutes before starting the grill. One cup of wood chips will last for about 20 minutes. Keep adding chips to the grill throughout the process.
If you use a charcoal grill, light the coals, when the coals are ready, place them on one side of the grill. Place some of the wood chips on top of the coals over the direct heat. Place your food on the side without the coals to cook it with indirect heat.
There are a number of ways to store roasted garlic depending on how long you need it to keep. Here are the best methods:
– Fridge – Store leftover roasted garlic cloves in an airtight container (I like these glass ones) in the refrigerator for 3-4 days.
– For longer storage, pop individual cloves from the peel and submerge them in olive oil in a small mason jar and place in the refrigerator for up to 10 days.
– And the longest storage – place roasted garlic cloves in an ice cube tray and cover with olive oil and place in freezer. Once frozen, pop them out, put them in a ziploc and back into the freezer.
