Smoked Pizza on a Traeger Wood Pellet Grill

Making pizza on your smoker is really easy and I think the best part is the crust! You’ll have the best baked and crispiest crust! I loved every bite and it was a great pizza night! Top it with all your favorite pizza toppings – i have some interesting ones for you – and smoke for an hour! Magical crust and it’s easy to make.

This is really about the technique because you can top a pizza with whatever you like! A good pizza starts with the crust. I’ve made my own homemade pizza dough but that is a LOT of time – so this time I bought a pre-made pizza dough. For great pizza toppings – pick your favorites – I’m a pepperoni and mushrooms kinda girl – use what you like!

What’s on the best Smoked Pizza?
Well that’s a loaded question – but feel free to make your pizza as loaded as you like. Let’s break down the major categories:
- Pizza Crust
- Use a pizza dough – not a pre-baked crust
- Prime Time Pizza Dough from Guy Fieri – this is my favorite pizza dough recipe
- Or buy your own dough – I recommend a dough ball vs. the canned kind
- Pizza Base
- I’ve never made my own – but maybe someday. You can either go with a:
- Jarred red pizza sauce
- Cheese sauce
- Olive oil – usually used in a white pizza
- Meat Toppings
- This is a free-for-all of whatever you like: pepperoni, sausage, hamburger, chicken, etc.
- Sausage – you can par-cook your sausage – it’s only going to be on the smoker for 10-15 minutes – so you can cook your sausage a little – but it doesn’t need to be fully cooked through
- Chicken – pre-cook but again – don’t overdo it or it will just dry out
- Vegetable Toppings
- My favorite part! You can put any vegetables on raw – but I did saute mine for a couple of minutes so they were a little softer when the pizza was done. I used bell pepper & mushrooms – but use your favorite toppings! I mean – what a great way to get your kids to eat veggies!
- Cheese Toppings
- Mozzarella cheese is the obvious choice and a great option but don’t be afraid to get a little wild and add some goat cheese – or ricotta cheese! Get creative! And finish with a sprinkle of Parmesan cheese.
- Seasonings
- Common seasonings are oregano, basil, garlic, crushed red pepper flakes and a little sprinkle of coarse kosher salt when you serve!

How do you make a delicious pizza on your pellet smoker?
It’s a quick process and if you’re looking for your pizza to have that smoky flavor enhancement – I highly recommend adding smoker tubes! The pizza cooks so quickly – that it doesn’t have a lot of time to absorb the smoke. But – your pizza is also ready super quick! So that’s the bonus!
- Remove your pizza dough from the refrigerator – it will be easiest to work with at room temperature
- Turn Traeger to Smoke – in about five minutes the Traeger will smoke.
- Be sure the lid is open for this portion.
- Be sure your pellet hopper is full.
- Once smoke dissipates, turn temperature dial to 500 degrees F. High heat = crunchy crust!
- Place pizza stone or pan on grill grates while it comes up to temp
- While grill is coming to temp, prepare your pizza toppings
- Saute any vegetables or partially pre-cook your meat
- Gather all toppings and dough on a tray or large cutting board – as you’ll be preparing your pizza on the Traeger!
- When the Traeger is up to temperature:
- Sprinkle pan with either olive oil or corn meal
- Start stretching your dough into a circular shape
- Place your stretched pizza dough onto the HOT pizza stone or pan.
- Stretch and push the dough to fill the pizza pan.
- It’s really important for your pan to be HOT! This ensures that the bottom of the crust gets super crispy!
- Top the pizza with sauce, cheese and toppings.
- Close lid and grill for 10-15 minutes until cheese is golden brown
- Side note: I grilled this pizza in 25 degree weather. My Traeger only held the temperature around 400 degrees and I let the pizza cook for about 20 minutes. It was still delicious!!!
- Remove pizza from Traeger and let rest for five minutes.
- Cut & serve!

How long does it take to smoke a pizza?
If you can keep your grill to 500 degrees F temperature – it should only take 10 minutes. At 400 degrees, it will take about 20 minutes.The high temperatures ensure that crispy crust.
How do you make a smokey pizza?
If you want more smoky flavor – you’ve got a couple of options! Both of these options work on a regular charcoal or gas grills – or will ADD MORE smoke to your smoker.
- Wood chips – Soak them in water for 30 minutes before starting the grill. One cup of wood chips will last for about 20 minutes. Keep adding chips to the grill throughout the process.
- If you use a charcoal grill, light the coals, when the coals are ready, place them on one side of the grill. Place some of the wood chips on top of the coals. Place your food on the side without the coals to cook it with indirect heat.
- Smoker Tubes – My friend Nick introduced me to the wonderment of a smoke tube! It’s a metal tube with holes – fill that tube with Traeger pellets and then light it with a butane lighter. Once the pellets catch fire – let them get started – then blow the flames out. Set them in the grill and shut the lid. The smoke flavor is all those tubes will leave behind!

What kind of wood pellets should I use to smoke my pizza?
There are many flavors of pellets that work in your Traeger pellet grill. I keep it simple and always use the Traeger Signature Blend which is a blend of Maple and Cherry. That said if you’re looking for something specific for pizza – Maple, Apple and Cherry make the perfect pizza.
How do you store and reheat leftover pizza?
Pizza leftovers are best stores in a zipper bag or in aluminum foil. Reheat in your air fryer at 325 degrees for 7-8 minutes. Keep the temp low so your cheese and toppings don’t get overdone.
