<p>Chicken Piccata is a simple dish &#8211; breaded chicken cutlets in a light lemon caper sauce served over spaghetti! It&#8217;s also a beautiful dish &#8211; your guests will think they&#8217;re with a fancy chef! Here&#8217;s what you&#8217;ll need: </p>

<li><strong>Boneless skinless chicken breasts</strong> &#8211; I used large chicken breasts and butterflied them and then pounded them thin! </li>



<li><strong>Breading: flour, salt, pepper</strong> &#8211; very simple pantry ingredients here</li>



<li><strong>Fresh spinach</strong> &#8211; get a whole lot of spinach! It cooks down so much! You need two bunches or maybe 10 oz package!</li>



<li><strong>White wine</strong> &#8211; I&#8217;m not a wine drinker so I always have those mini bottles of white &amp; red wine in my pantry. You could swap with extra chicken stock if you like! I use a dry white wine like a chardonnay or sauvignon blanc.</li>



<li><strong>Chicken stock</strong> &#8211; You can use chicken broth, stock is just a little thicker.</li>



<li><strong>Lemon</strong>s &#8211; just one lemon for this &#8211; we&#8217;ll use half for juicing and half for slicing!</li>



<li><strong>C<a href="https://amzn.to/3uglg8D">apers</a></strong> &#8211; if you&#8217;re not familiar they taste like tiny tiny olives</li>



<li><strong>Fresh parsley</strong> &#8211; the Italian parsley does add flavor &#8211; highly recommend it!</li>



<li><strong>Spaghetti </strong>&#8211; any long pasta would be fine &#8211; but the spaghetti holds up well with the chicken</li>



<li><strong>Parmesan cheese</strong> &#8211; I&#8217;m hosting an Italian student &#8211; if she saw me use the jarred stuff &#8211; she&#8217;d leave!</li>



<li><strong>Staples:</strong> Butter, Olive Oil, Salt, Pepper, Garlic, Red Pepper Flakes</li>

<li><strong>More Lemon</strong> &#8211; it&#8217;s a fairly subtle lemon flavor &#8211; so you add some lemon zest from the lemon to your sauce</li>



<li><strong>Cream</strong> &#8211; this is a brothy sauce but <a href="https://www.thefoodhussy.com/copycat-cheesecake-factory-chicken/" target="_blank" rel="noreferrer noopener">Cheesecake Factory&#8217;s Chicken Piccata</a> has cream in their sauce! </li>



<li><strong>Shrimp</strong> &#8211; if you have someone that isn&#8217;t a fan of chicken, you could saute shrimp (or other seafood favorites) and add that instead!</li>

<h2 class="wp-block-heading" style="font-style:normal;font-weight:400">How to make Maggianos Chicken Piccata</h2>



<p>This dish is easy to make &#8211; get your pasta started and then start up a large skillet! The rest of the meal is done in less than 15 minutes!</p>



<p></p>



<ol class="wp-block-list ingredients">
<li>Preheat oven to 250º or to “Keep Warm”. Cook spaghetti according to package directions. </li>



<li>Butterfly &amp; slice chicken breasts in half to 3/8 to 1/2 inch thick. Place chicken breast in a ziplock bag and pound thin with a <a href="https://amzn.to/2QxrjTq">meat tenderizer</a></li>



<li>Mix together the flour, salt and pepper . Rinse the chicken pieces in water. Dredge them thoroughly in the flour mixture.</li>



<li>Heat non-stick skillet over medium and add 1 tbsp of butter and 1 tbsp of vegetable oil</li>



<li>Cook chicken breast until brown on both sides and remove from the pan. (about 3-4 min per side) Move chicken to rimmed baking sheet and cover with foil. Place in oven to keep warm or on a warm serving platter.</li>



<li>Reduce heat slightly on skillet and add spinach, 3 Tbsp butter, and salt. Saute spinach until it wilts and remove from pan and set aside.</li>



<li>Add wine to the pan and scrape up any browned bits to mix with the wine</li>



<li>Add chicken stock, 3 tbsp butter, garlic and lemon juice to the pan. Stir until butter melts then add parsley, capers and Lemon slices. Raise heat until the mixture begins to bubble and thicken slightly. Remove from heat. </li>



<li>Drain pasta and place in large bowl. Add olive oil, red pepper flakes and Parmesan cheese. Toss to coat. </li>



<li>On serving plate add 1 cup coated spaghetti. Next to spaghetti, lay down 1/2 cup cooked spinach and a spoonful of chicken stock mixture. Top spinach with 2 chicken cutlets. Spoon sauce with capers, parsley and lemon slides over top of chicken and serve. </li>

<p>I love quick bread recipes because I usually have everything in the pantry ready to go! I like to buy fruit like blueberries when they&#8217;re on sale because they&#8217;re super easy to freeze! Here&#8217;s what you need: </p>

<li>Softened butter &#8211; the softer the better so the sugar melts into it</li>



<li>Sugar &#8211; you could use light brown sugar or a combination</li>



<li>Baking powder &amp; Baking soda &#8211; these help the bread rise</li>



<li>Cinnamon &#8211; I always toss in a little bit of Saigon cinnamon &#8211; so yum! </li>



<li>Salt</li>



<li>Ripe&nbsp;bananas &#8211; they need to be fairly soft so brown spots starting</li>



<li>Lemons &#8211; I like to use fresh lemons because the flavor is more vibrant

<li>The lemon flavor with the amounts listed is fairly light. If you want a strong lemon flavor, add more juice and more zest. </li>

<h2 class="wp-block-heading" style="font-style:normal;font-weight:400">How to make Blueberry Lemon Banana Bread</h2>



<p>Quick breads are so easy to make! </p>



<ol class="wp-block-list ingredients">
<li>Mash the bananas and set aside. Preheat oven to 350º.</li>



<li>In a large bowl, cream together butter and sugar with a mixer. You&#8217;ll want to mix for 3-4 minutes until the mixture is more creamy than gritty. 
<ul class="wp-block-list">
<li>You can use a hand mixture or stand mixer.</li>
</ul>
</li>



<li>Add in lemon juice and vanilla and mix.</li>



<li>To sugar mixture, add in dry ingredients: flour, baking soda, baking powder and salt. Mix again. </li>



<li>Add the banana and mix in. (You can stir bananas in but the mixer incorporates it better)</li>



<li>Toss frozen blueberries in flour and shake off any excess</li>



<li>Gently fold in floured blueberries and all but a teaspoon of zest.</li>



<li>Spoon batter into a greased loaf pan and smooth the top. Sprinkle remaining lemon zest on top and bake for 50-60 minutes. Check with a toothpick or cake tester to be sure comes out clean.</li>



<li>Cool on a rack for at least 10 minutes in the pan. Then &#8211; carefully &#8211; use a towel to cover top of bread. Turn loaf pan over and remove loaf of bread &#8211; then set on rack to continue cooling.</li>



<li>Slice and serve with softened butter.</li>

<h2 class="wp-block-heading">What&#8217;s the difference between sea and bay scallops?</h2>



<p>Sea scallops are the big ones! They are usually 1 1/2-2&#8243; across and much thicker. They are caught year-round up to in deep, cold sea waters. There are about 20-30 sea scallops per pound. </p>



<p>Bay scallops are the little guys! They&#8217;re about 1/2&#8243; in diameter and are caught in cold, shallow waters and bays (thus the name). There are about 50 to 100 bay scallops per pound.</p>

<h2 class="wp-block-heading">Air Fryer Sea Scallops Recipe Ingredients </h2>



<p>You really only need 1 ingredient: Scallops! Beyond that &#8211; I wanted to make a quick and easy butter sauce. You&#8217;ll need: </p>



<ul class="wp-block-list">
<li>Sea scallops &#8211; they&#8217;re about 1 oz each and are readily available in the freezer section</li>



<li>Herb seasoning &#8211; Old Bay Lemon Herb is a favorite but cajun seasoning is also good</li>



<li>Butter &#8211; salted butter is my preference for more flavor</li>



<li>Lemon juice &#8211; use fresh lemon juice if you can </li>



<li>Capers &#8211; if you&#8217;re not familiar these are little tiny little flower buds that are pickled. </li>



<li>Garlic &#8211; Minced garlic &#8211; fresh is best but the jarred kind is so easy!</li>

<h2 class="wp-block-heading">How do you make air fryer scallops? </h2>



<p>Cooking scallops is a bit delicate and doesn&#8217;t take long. But if you overcook &#8211; they get rubbery quick. I have a bunch of Tips &amp; Tricks (scroll down) &#8211; but here&#8217;s the quick version: </p>



<ul class="wp-block-list">
<li>Pat dry your thawed/fresh scallops with paper towels to remove excess moisture (using frozen? see tips section for how to thaw)</li>



<li>Season scallops with lemon herb seasoning</li>



<li>In a microwave-safe bowl, melt butter and mix with garlic, lemon and capers</li>



<li>Place seasoned scallops in <a href="https://www.anrdoezrs.net/click-100254268-14536226" target="_blank" rel="noreferrer noopener nofollow">air fryer</a> &#8211; keep about 1/2 inch between them 
<ul class="wp-block-list">
<li>To prevent sticking, you can either set them on parchment paper or spray the pan lightly with nonstick cooking spray.</li>
</ul>
</li>



<li>Lightly brush scallops with garlic butter </li>



<li>Air Fry at 400º for 6 minutes</li>



<li>Using an instant read meat thermometer, be sure internal temperature of scallops has reached 130º </li>



<li>You may need to reheat the butter sauce so it&#8217;s melted. </li>



<li>Remove scallops from air fryer, drizzle melted lemon butter sauce over scallops and serve! You can also add a sprinkle of fresh parsley.  </li>

You can also use frozen scallops. </p> </div> <div class="schema-faq-section" id="faq-question-1631844828405"><strong class="schema-faq-question">Can I air fry scallops from frozen? </strong> <p class="schema-faq-answer">I wouldn&#8217;t recommend it. You can quick thaw scallops by placing them in a bowl of cold water for about 30 minutes. They should be fairly thawed out by then. Or thaw in the refrigerator for 24-36 hours. </p> </div> <div class="schema-faq-section" id="faq-question-1631845202116"><strong class="schema-faq-question">How many scallops can you cook at once in the air fryer? </strong> <p class="schema-faq-answer">It depends on how big your air fryer is.
