Flank steak is my favorite cut of meat – it’s very affordable for the size of a steak that you get! You’ll definitely feed 4-6 from one flank steak and it’s cheaper than one ribeye.
Plus – at medium rare – I challenge you to find a better texture steak! This marinade just enhances everything with a little citrus flavor punching through. I ate the leftovers cold! Just opened the container and snack time!!! (You might want to do two of them just for more leftovers!)

Smoked Flank Steak Ingredients
The ingredients for this flank steak recipe are simple and the main prep time comes with marinating the steak.
- 2 lb flank steak – these are typically about $10 and come folded over – so you’ll be surprised when you open it up how much you’ve got to work with!
- Steak marinade – you’ll notice there’s no salt but the Worcestershire & Soy Sauce are plenty salty!
- olive oil
- Worcestershire sauce
- lemon, juiced – you could swap and use a lime – you might need two limes to get enough lime juice since they’re smaller
- soy sauce
- minced garlic
- fresh basil – you can use dried if you need to but fresh is better! I’ve got basil, dill, parsley and more going in my Aerogarden – fresh herbs all the time!
- fresh Italian parsley – you could also swap cilantro here if you like that
- red pepper flakes

How to Smoke a Flank Steak on the Traeger
This smoked steak dish is so amazing! Be prepared to taste the most tender piece of beef with a delicious salty, savory citrus marinade.
- Prepare marinade by mixing together all ingredients and add to a plastic zipper bag
- Add flank steak to zipper bag and place in refrigerator for 6-8 hours
- Preheat Traeger pellet grill to 225º
- Remove flank steak from refrigerator and let come to room temperature (about 30 minutes)
- Remove from marinade and place flank steak directly on grill grates and smoke for 60 minutes – flip half way through
- Flank steak is best at medium rare – check steak with meat thermometer and remove steak at 130º internal temp
- Always slice flank steak AGAINST the grain and just ENJOY!

Yes – but they cook fairly quickly – so you’re only going to get an hour of smoke time. So the smoky flavor is more mild but definitely still there.
Nah – I mean – you do that when you’re cooking it quickly – but it was amazingly delicious this way.
No. They’re both from under the belly (different spots) but the skirt steak is much thinner, lighter and longer. That said – you cook them both in a very similar manner and cut against the grain.
Flank steak can be tough because these muscle fibers on the cow are always in motion. Marinate the steak so the juices can penetrate the meat for optimum tenderness, smoke it low and slow at 225º, take it off at 130º internal temperature and most importantly – slice against the grain!
There are many flavors of pellets that work in your Traeger pellet grill. I keep it simple and always use the Traeger Signature Blend which is a blend of Maple and Cherry. That said if you’re looking for something specific for beef – the best are Hickory, Mesquite & Pecan.
Yes! You’ll need to use wood chips in foil packets or smoke tubes filled with Traeger pellets.
Store leftovers in an airtight container and refrigerate up to a week. This steak was so amazing – I just ate it cold most days! You can reheat in the microwave for 1-2 minutes or in the air fryer at 300º for 3-4 minutes. You don’t want to cook it too much – just warming it up so it stays medium-rare.

- Spicier – look for this Chipotle Marinade – it’s super easy – just add water & oil – it’s a favorite!
- Chimichurri – add a quick chimichurri sauce when you serve (that recipe has a chimi recipe for the salad)
- Sweet & Savory – try a Brown Sugar Bourbon marinade for a totally different flavor
- Simple – rather than using a marinade, use a simple steak seasoning like my Texas Roadhouse steak seasoning with salt, black pepper, brown sugar, garlic powder, onion powder and more
