- Ground Chuck – Don’t go lean on this one and the 80/20 beef is what you need.
- Smoked Paprika – Be sure to get the SMOKED paprika! Richer flavor!

Texas Roadhouse Chili Ingredients
This Texas Roadhouse Chili Recipe has simple ingredients and lots of delicious chili seasonings – but NO BEANS! That’s how you know it’s a true Texas chili! Here’s what you’ll need:
- Ground Chuck (80/20 ground beef)
- Garlic – minced garlic – you can use jarred or fresh
- Onion – diced yellow onion is best
- Jalapenos – I used 1 jalapeno and removed the seeds
- Spices: Chili Powder, Cumin & Smoked Paprika
- Seasonings: Brown Sugar, Salt & Black Pepper
- Crushed Tomatoes & Diced Tomatoes – you need tomato sauce & pieces of tomato
- Vinegar
- Corn Starch – this will thicken the chili (tomato paste would thicken as well)
- Toppings: Cheddar Cheese, Onion, Crackers, Sour Cream, Avocado, Green Onions, Tortilla Chips

Recipe Variations
Chili can mean different things to different people – just ask Texas and Cincinnati! This Texas Roadhouse Copycat Chili Recipe is as close as you’ll get to the restaurant dish in your home – but you can take some liberties based on your family’s tastes!
- Beans – this Texas chili recipe does NOT have beans! But if you like them – add them! – red kidney beans are the most common but you could also use pinto beans.
- Spicier – I went mild using regular chili powder but add stronger chili powders, hotter peppers or red pepper flakes if you like it spicier
- Instant Pot or Slow Cooker – you could also make in the IP or the crock pot.
- Protein – Swap chuck for lean ground beef, ground turkey or beef stew meat.
- Juicier – this is a fairly thick chili – if you want to loosen it up – add a little beef broth

How to make Copycat Texas Roadhouse Chili Recipe
This is such an easy recipe – and it’s all in one pot! Let’s get started:
- Pour olive oil into a dutch oven or large pot on medium high heat.
- Add ground chuck, onion, jalapeños and garlic into the pot and brown until pink is nearly gone – about 5-7 minutes. Drain any excess oil from the pan.
- Lower temp and add chili powder, cumin, paprika, cumin, salt, pepper, brown sugar, vinegar and tomatoes. Mix well and crush tomatoes and meat to a fine texture. Simmer for 10 minutes.
- In a small mason jar, whisk corn starch into 1/4 cup water. Pour corn starch mixture into the pot and stir. Cook for 10 more minutes so the chili will thicken.
- Serve with sour cream, shredded cheese, diced red onion, avocado slices and crackers.

Super quick, and easy! I did add kidney beans and it did not disappoint! So good!
