What’s in the southwest senorita at Chicken Salad Chick?
The Southwest Senorita has simple ingredients that add crunch, creaminess and bold flavors!!! Here’s what you’ll need:
- Boneless Skinless Chicken Breast – you need 2 cups of shredded chicken which is about 2 medium sized chicken breasts
- Duke’s Mayonnaise – Remember the olden days of Miracle Whip? NOPE – me either!
- Celery & Onion Powder – these are the only real additions for the basic CSC salad
- Poblano Pepper – you only need 2 tablespoons but be mindful – these vary on spiciness and I forgot to wash my hands after chopping. You can DM for ways to cool your skin! 😉
- You could swap a jalapeno or even bell pepper if you were in a pinch.
- Corn – I got a can of corn because I only needed 3 tablespoons – but I’ll add the rest to salad later this week.
- If you want extra crunch – add the freeze-dried corn – it’s sweet & crunchy
- Cheddar Cheese – you’ll need just 1/4 cup of shredded – I like sharp cheddar but you can use whatever orange cheese you have
- Southwest Seasoning – after doing some research – southwest = taco. You’re looking for a combo of chile powder, cumin, paprika, garlic, salt, pepper and maybe a little coriander – all of which are in taco seasoning!

Chicken Salad Chick Southwest Senorita
Ingredients
- 2 cups cooked chicken breast shredded (about 1 lb)
- 2 tbsp celery finely minced
- 1/2 cup Duke’s mayonnaise
- 1/8 tsp onion powder
- 2 tbsp poblano peppers diced
- 3 tbsp sharp cheddar grated
- 1/4 cup whole kernel corn
- 2 tbsp taco seasoning
Instructions
- Use the paddle attachment on your mixer to shred your chicken. This is the KEY to getting the texture that Chicken Salad has!2 cups cooked chicken breast
- FINELY mince your celery – to where you can barely see pieces.2 tbsp celery
- In a large mixing bowl, to your chicken mixture – add the mayonnaise, onion powder, poblano peppers, cheddar cheese, corn and taco seasoning1/2 cup Duke’s mayonnaise, 1/8 tsp onion powder, 2 tbsp poblano peppers, 3 tbsp sharp cheddar, 1/4 cup whole kernel corn, 2 tbsp taco seasoning
- Serve with bread, crackers or on a salad. I like to drizzle a little extra buffalo sauce on top and sprinkle with green onions.
