- KitchenAid Mixer – that’s right – pull out the KitchenAid mixer – using the paddle attachment is the best way to get the texture right on the chicken! (I got mine 100 years ago at a flea market!)
- Get yourself a cheap egg slicer – it’s great for this recipe or anytime you want egg salad!
- I make a lot of Chicken Salad Chick recipes and Duke’s Mayo is the one ingredient I ALWAYS have in my pantry!

Ingredients for Olivia’s Old South Chicken Salad
I’m not sure who Olivia is but a little research shows that it is a Southern tradition to have pickle relish and hard boiled eggs in chicken salad. So you’ll need those for this version of chicken salad. Here’s everything you’ll need:
- Shredded Chicken Breast – you can poach your own chicken and shred or just use rotisserie chicken. The easiest way I’ve found is the paddle attachment on my mixer. Chicken Salad Chick restaurants use white meat only but a little dark meat from the rotisserie is fine.
- Celery – finely minced is key – it’s there but you can’t really see it
- Mayonnaise – I always use Dukes but use what you like
- Onion Powder – this is the not-so-secret secret seasoning but if you like you could swap with garlic powder
- Hard Boiled Eggs – if you want a sure fire recipe for hard boiled eggs that peel easy – check out this video from America’s Test Kitchen!
- Sweet Pickle Relish – there are two kinds of relish – sweet & dill – this uses the sweet version
- Pickle Juice – you can use a little extra juice from the relish or if you have a jar of pickles in the fridge – grab a little from there!

- Classic Carol Chicken Salad – just the basics: mayo, celery, onion powder…and chicken

- Fruity Fran – similar to the Nancy but replace the pecans with pineapple (and I liked it much better!)

- Buffalo Barclay – with buffalo sauce
- Maui Mama – with bacon, jalapeno & pineapple!
- Barbie-Q – with hickory bbq flavor

How to make Olivia’s Old South chicken salad
- Use a mixer with the paddle attachment to shred your chicken. Then chop it a bit more. This is the KEY to getting the texture that Chicken Salad has!
- FINELY mince your celery – to where you can barely see pieces.
- In a large bowl, add chicken, celery, eggs, relish mayonnaise and onion powder and stir until mixture is combined.
- Refrigerate for 1-2 hours in a covered dish.
- Serve as a sandwich with lettuce on bread or a croissant, on crackers or add a scoop to a salad.

What is in Olivia’s Old South chicken salad? This Chicken Salad Chick favorite is the classic Carol chicken salad (chicken, celery, mayo) with hard boiled eggs added to it!
How do you store leftover chicken salad? Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week.
Should I add salt & black pepper? Feel free to taste your chicken salad and if you feel it’s lacking – go ahead. I tasted this next to the Chicken Salad Chick and didn’t feel it needed any.
How do you poach chicken breast? Place chicken breasts in water, chicken broth or chicken stock and bring to a boil. Turn heat to low and simmer for 20 minutes or until internal temperature of chicken is 165º. Remove from liquid and shred.

- KitchenAid Mixer Paddle Attachment – toss your poached chicken in and it shreds the chicken in a minute!
- Cheap egg slicer – I use mine all the time – it’s so much easier than dicing it
- Good Knife – I like this good Santoku knife for getting a fine dice on the celery. It’s a good length (shorter than a Chef’s knife) and feels good in your hand when you’re working with it!

Ingredients
- 2 cups cooked chicken breast shredded
- 2 tbsp celery finely minced
- 2/3 cup Duke's Mayonnaise
- 1/8 tsp onion powder
- 2 hard boiled eggs peeled, diced
- 3 tbsp sweet pickle relish
- 1 tbsp pickle juice
