Fruity Fran Chicken Salad Ingredients

Chicken Salad Chick admits that the recipe is simple – chicken, mayo and a secret seasoning – I’ve unlocked it for you! Here’s what you need:

  • Shredded Chicken Breast – you can poach chicken breasts or chicken tenderloins or just use rotisserie chicken. Chicken Salad Chick uses white meat but I mix in a little dark meat when I’m making at home.
  • Duke’s Mayonnaise – this is the choice of the South – but use what you like
  • Minced Celery – be sure to FINELY mince your celery – you won’t see big pieces at CSC!
  • Onion Powder
  • Fuji Apples – any sweet crunchy apple will work
  • Red & Green Seedless Grapes – they use both colors – but you can use what you have – you only need a handful of grapes
  • Pineapple Tidbits – I used a 4 oz snack pack-style cup

With 12 varieties of chicken salad, in addition to pimento cheese, egg salad and a bevy of side dishes – Chicken Salad Chick is a favorite fast casual restaurant. Here are all the varieties of chicken salad (and my recipes for some – I’m workin on doing them all!):

  • Classic Carol – just the basics: mayo, celery, onion powder…and chicken
  • Dixie Chick – like the Carol but add minced onions
  • Sassy Scotty – add cheddar, bacon & ranch
  • Cranberry Kelli – Carol with dried cranberries and slivered almonds
  • Fancy Nancy – it sure is fancy when you add fruit like fuji apples, grapes and crushed pecans
  • Olivia’s Old South – add sweet pickles & hard-boiled egg
  • Kickin’ Kay Lynne – buffalo sauce, ranch, bacon, shredded cheddar cheese, jalapeños, & Sriracha
  • Jalapeño Holly – Diced Jalapenos
  • Lauryn’s Lemon Basil – chopped pecans, fresh basil, & lemon
  • Buffalo Barclay – with buffalo sauce
  • Barbie-Q – with hickory bbq flavor

How to make Fruity Fran

The most work here is cooking and shredding the chicken. Chicken Salad Chick has a very fine shred on their chicken – here’s how to get the same texture:

  1. Use a food processor or VitaMix to shred your chicken. This is the KEY to getting the texture that Chicken Salad has!
  2. FINELY mince your celery – to where you can barely see pieces. 
  3. In a medium bowl, add chicken, mayonnaise and onion powder and stir well.
  4. Add celery, apple, grapes and pineapple and stir mixture until combined.
  5. Serve with bread, croissants, crackers or on a bed of lettuce.

Tips, Tricks & FAQs

How do you store leftover chicken salad?

Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week.

Should I add salt & pepper?

You can add to taste after making – but I tried this vs. the store-bought and didn’t see the need.

Can I freeze shredded chicken?

Yes! I like to take a big batch of chicken breasts and shred it up – then freeze that. Then whenever I want chicken salad – just scoop out 2 cups and make a batch!

Ingredients
  

  • 2 cups cooked chicken breast shredded
  • 2 tbsp celery finely minced
  • 2/3 cup Duke's mayonnaise
  • 1/8 tsp onion powder
  • 1/2 Fuji Apple diced
  • 1/4 cup grapes diced
  • 1/4 cup pineapple tidbits

Instructions
 

  • Use a food processor, stand mixer or VitaMix to shred your chicken. This is the KEY to getting the texture that Chicken Salad has!

    1/2 Fuji Apple, 1/4 cup grapes, 1/4 cup pineapple tidbits
  • Serve with bread, crackers or on a salad.
