If you love a little zip in your chicken salad – this copycat Chicken Salad Chick Kickin Kay Lynne is for you! They have a Buffalo Barclay that is just buffalo – but this one is SO MUCH MORE!!! I’m officially addicted! Here’s what you’ll need:

  • Chicken – you’ll need a pound of boneless skinless chicken breasts which is 1-2 chicken breasts
    • you can use rotisserie chicken if instead but they for sure use chicken breast
  • Mayonnaise – I am a Duke’s fan myself but Hellman’s works as well. (And to believe I grew up on Miracle Whip! Yuck!)
  • Seasonings – Ranch seasoning powder, onion powder, garlic powder, celery salt
  • Saucy Additions – Buffalo Wing Sauce & Sriracha
    • Buffalo adds bold flavor and replaces some of the mayo for a lighter but still creamy texture
  • Cheese – finely grated sharp cheddar cheese is the first choice but use what you love
  • Bacon – I always like to make my own bacon and crumble it myself – but there are versions at the grocery store that are REAL bacon
  • Jalapenos – pickled jalapeños add heat without being overpowering

Recreating this seasonal Chicken Salad Chick favorite is easy. Just mix shredded chicken with creamy Duke’s mayonnaise and a whole lotta delicious things for a quick lunch-ready chicken salad. Serve with a side of their Pasta Salad for a full scale restaurant lunch!
