Cabbage Soup Recipe Ingredients

Sometimes cabbage soup is just cabbage and broth – but not here! I loaded this easy cabbage soup with everything but the kitchen sink!

  • ground turkey breast – trying to stay healthy but you can easily swap with ground pork, ground beef, pulled chicken breast or holiday leftovers like turkey
  • green cabbage – of course!
  • fat free, low sodium beef broth, vegetable broth or chicken broth
  • minced garlic – I buy the jarred – but fresh is always great too
  • tomato paste – I buy the kind in a tube since I never use a whole can
  • mushrooms, sweet yellow onion, carrots, frozen green beans & zucchini – this recipe has lots of veggies, if there’s one you don’t like – swap it out with one you do like.
  • basil & oregano – dried herbs are great here – or swap out with an Italian seasoning
  • tomato sauce – helps make it more than just a broth soup
  • stewed tomatoes – more veggies! any kind of canned tomatoes will do – diced, stewed, roasted, etc.
  • frozen cauliflower rice – I used this for more veggie punch! you could also swap with something like quinoa but just know it’s going to absorb more liquid so you’ll need to compensate for that
  • Better than Bouillon Beef Base – I find BTB adds so much flavor – I just wanted more – you could swap with garlic, chicken or vegetable – whatever taste you like best
  • salt & black pepper – always – right? If you like a little kick, you could add red pepper flakes!

How do you make cabbage soup?

It’s super easy! Just six steps to the best soup you’ve ever had!

  1. Heat dutch oven or large pot on medium-high heat – no olive oil needed! Add 1/4 cup beef broth, carrots and onions. Stir and cook for 5 min
  2. Add lean ground turkey and garlic. Add more broth if pan is dry. Brown turkey and cook through.
  3. Add remaining ingredients EXCEPT zucchini
  4. Bring to a boil. Cover, reduce temp to medium heat and simmer for 20 minutes
  5. Add zucchini and simmer 5 min more
  6. Ladle into bowls and serve with a sprinkle of coarse sea salt and garnish with chopped fresh parsley

Is cabbage soup really a weight loss soup? (& why it makes you poop!)

Yes! Cabbage does actually have detox power! It has diuretic properties that help rid your body of toxins, excess liquids, etc – and THAT’S WHY IT MAKES YOU POOP! The detox and diuretic properties are what make it a weight loss favorite! 😉

Can cabbage soup be frozen?

Yup! There’s no pasta or dairy – so it freezes very well! This recipe makes six 2-cup servings (i.e. A LOT OF DAMN SOUP) – but because it freezes so well – I was thrilled to keep eating it.
I always use airtight containers (I like these glass ones) for all my leftovers. You could also pour (once cooled) this comforting soup into ziploc bags and lay them flat in the freezer.

Can cabbage soup be made in the crock pot or slow cooker?

Yup! After you’ve browned the turkey – you can transfer everything to the slow cooker and cook on low for 4 hours. I would still reserve the zucchini and add in the last 30-60 minutes so it doesn’t just disintegrate.

Recipe Variations

You can leave out the turkey and it zero weight watchers points. Here are other substitutions you can try out!

  • Veggies – Add more non-starchy vegetables like celery, broccoli, bell peppers, cauliflower, brussels sprouts and more to keep the points low!
  • Legumes – you can add white beans, chickpeas and more – but it will add points to the vegetable soup recipe
  • Brown Rice – I used cauliflower rice to keep it at zero – but brown rice would be a good substitute (but adds points)
  • Sausage – swap the lean ground turkey for sausage – or turkey sausage – for more flavor (and points)
  • Fresh Herbs – using fresh herbs at the end will add a strong pop of flavor – I would you basil and parsley

Ingredients
  

  • 1 lb fat free ground turkey breast
  • 2 cups cabbage chopped
  • 4 cups fat free, low sodium beef broth
  • 4 cloves garlic minced
  • 1 tbsp tomato paste
  • 1 cup mushrooms sliced
  • 1/2 cup onion diced
  • 1 cup carrot diced
  • 1 cup frozen green beans
  • 1 cup zucchini halved & sliced
  • 1 tsp basil
  • 1 tsp oregano
  • 1 cup tomato sauce
  • 2 cups stewed tomatoes
  • 2 cups frozen cauliflower rice
  • 1 tbsp Better than Bouillon Beef Base
  • 1 tbsp salt
