<p>You could definitely rice your own cauliflower but using the frozen bag is just SO easy! The rest of the ingredients are pantry staples for me &#8211; here&#8217;s what you&#8217;ll need: </p>

<li>12 oz frozen cauliflower rice &#8211; feel free to rice your own if you like</li>



<li>1/3 cup heavy cream &#8211; you can swap out with half and half if you like or even chicken broth</li>



<li>1 10 oz can rotel tomatoes &#8211; I used mild but use the spice level you like</li>



<li>1 cup shredded pepper jack cheese &#8211; this provides a little extra kick </li>



<li>1 tsp salt</li>



<li>1/2 tsp black pepper</li>



<li>2 tbsp fresh cilantro &#8211; or diced green onions would provide a little crunch</li>



<li>Lime wedge</li>



<li>OPTIONAL: Diced avocado</li>

<p>This easy cauliflower recipe could be changed up based on your tastes &#8211; here are some ideas for you: </p>



<ul class="wp-block-list">
<li><strong>Protein</strong> &#8211; this would also be great to add sauteed diced chicken, browned ground pork or even sprinkle with crispy bacon pieces</li>



<li><strong>More Veggies</strong>&nbsp;&#8211; Before you heat up the cream &#8211; you could lightly saute mushrooms, onion, broccoli and more &#8211; then add the cream and go from there. So yum!</li>



<li><strong>Cheese</strong>&nbsp;&#8211; I used pepper jack but you could swap out cheddar cheese, mozzarella, colby jack or even cream cheese.</li>



<li><strong>Spice</strong>&nbsp;&#8211; I don&#8217;t want too much spice so I used the mild tomatoes &#8211; but you could use spicier or even add some chipotle seasoning or diced jalapenos</li>



<li><strong>Crunch</strong>&nbsp;&#8211; if you want a little crunch, toss some breadcrumbs in melted butter and sprinkle on top of the cauliflower rice &#8211; then bake at 375º for 10-15 min. </li>

<p>This low carb side dish is so easy to make! Heat up the cauliflower and put it all together. I added the diced avocado for a more texture and this easy cheesy cauliflower rice recipe was a huge hit! </p>



<ol class="ingredients wp-block-list">
<li>Microwave cauliflower rice according to package instructions</li>



<li>Pour cream in a large skillet</li>



<li>Bring to a simmer over medium heat</li>



<li>Stir in cheese and whisk until it forms a cheese sauce. Add salt &amp; pepper to taste. </li>



<li>Add drained tomatoes and cauliflower rice into the pan &#8211; cook 3-5 min until thickened and those flavors mix together</li>



<li>Sprinkle with fresh chopped cilantro, juice from 1/2 lime and diced avocado. </li>

Cauliflower has just 25 calories per cup <strong>vs</strong>. 218 for a cup of cooked brown <strong>rice</strong>. Wow!!! Save the carbs and calories for a side of guac! </p>

<h2 class="wp-block-heading">How to make the best cauliflower rice?</h2>



<p>Cauliflower Rice is a great low carb side dish and it goes great with a vegan bowl &#8211; but also is great with meat as a low carb rice replacement. Here&#8217;s how you make it: </p>



<ul class="wp-block-list"><li>The first step is to break down the fresh cauliflower &#8211; you can do this in one of two ways: <ul><li><a href="https://amzn.to/2MADaRQ" target="_blank" rel="noreferrer noopener nofollow">Box Grater</a> &#8211; you can use the small side of your cheese/box grater and grate the head of cauliflower. I peeled off all of the leaves and cut off the stem first &#8211; then cut the head in half. After that, just grate away! It&#8217;s a nice five minute arm workout. </li><li><a href="https://amzn.to/3uSSZF5" target="_blank" rel="noreferrer noopener nofollow">Food Processor</a> &#8211; another option is to trim your cauliflower down to large florets and pulse in the food processor until it breaks down to rice-sized pieces. </li></ul></li><li>The food processor definitely makes larger chunks that have more &#8220;bite&#8221; than the grater &#8211; but I was fine with the grater texture and consistency. </li><li>After you have the cauliflower broken down, then saute for 3-5 minutes on the stovetop in olive oil with 1-2 bay leaves in the pan. Don&#8217;t break the bay leaves up because you&#8217;re going to want to remove them. </li><li>Once the rice is done and you&#8217;re ready to serve, add in 1/4 cup chopped cilantro, 1 tsp coarse sea salt and juice from one lime. Feel free to add some lime zest as well for more flavor!</li></ul>

<p>I had a friend over for a work day and made them for lunch &#8211; she couldn&#8217;t believe how filling it was for being so good for you as well. There is some ground turkey in them but also lots of vegetables and even a little bit of cheese. </p>

<h2 class="wp-block-heading">Tell me about <a href="https://www.dpbolvw.net/click-100254268-14410251" target="_blank" rel="noreferrer noopener nofollow">Weight Watchers</a> </h2>



<p>Weight Watchers has been around forever! I lost 80 pounds on it about ten years ago &#8211; unfortunately I gained a lot back after some pretty difficult personal issues. But 2021 is my year baby! I joined <a href="https://www.dpbolvw.net/click-100254268-14410251" target="_blank" rel="noreferrer noopener nofollow">Weight Watchers</a> this week and am ready to go! They have different plans based on how you eat and what works for you. You can switch between them too &#8211; which is nice. I&#8217;m starting on the Green plan &#8211; which gives you the most &#8220;points&#8221; but the least amount of &#8220;zero point&#8221; foods. </p>



<p>I&#8217;m going to be putting the points for every recipe right up front so you know when you come in what you&#8217;re getting depending on your plan. <h2 class="wp-block-heading">How to make Air Fryer Stuffed Peppers </h2>



<p>These Weight Watchers stuffed peppers are filled with ground turkey and lots of veggies! They&#8217;re also super easy to make &#8211; so let&#8217;s do it! </p>



<ul class="wp-block-list">
<li>Heat a non-stick skillet on medium high and add ground turkey, zucchini, mushrooms and water. Yes &#8211; water!!! Just a little bit of water will keep the turkey from sticking and is a great alternative instead of adding oil. </li>



<li>Pop the cauliflower rice into the microwave and steam it while you brown the turkey and veggies for five minutes until veggies are soft and turkey cooked through.</li>



<li>Add rice, Worcestershire sauce and crushed tomatoes to turkey mixture and simmer for 2-3 minutes. </li>



<li>While that is simmering, prep the peppers by cutting off the top and clean the insides out. </li>



<li>Spoon the turkey mixture into the peppers and we&#8217;re ready to cook! </li>
</ul>



<h2 class="wp-block-heading">How long to cook Stuffed Peppers</h2>



<p>AIR FRYER: Place the peppers into the air fryer and air fry at 350 for 10 minutes. Top with cheese and air fry five minutes more. </p>



<p>OVEN: Cover with foil and bake at 350 for 30 minutes. Uncover, top with cheese and bake another 15 to 20 minutes.</p>



<h2 class="wp-block-heading">Can you freeze stuffed peppers?</h2>



<p>Yes! You want to freeze them BEFORE you bake them if you can. The soft peppers won&#8217;t reheat well if you do it after you bake. </p>
