I love a melt sandwich and this Chicken Salad Melt Sandwich is one I make weekly! I have the perfect Chicken Salad recipe and it’s great with melted provolone cheese and a light, airy, buttery croissant!

Chicken Salad Melt Ingredients
The perfect chicken salad only has 4 ingredients and you’ll mix that together to put on your croissant and melt with some cheese. Here’s what you need:
- Chicken Salad – I’ve made half of the Chicken Salad Chick chicken salad recipes – so pick your favorite!
- To make CSC Classic Carol Chicken Salad you’ll need cooked chicken breast, minced celery, onion powder and Duke’s Mayonnaise
- Once chicken is cooked – just mix it together – 10 min prep time!
- Croissants – you could have chicken salad on a slice of bread but why???
- Provolone Cheese – this is a great melting cheese but you could also use Monterrey Jack, Cheddar Cheese, Mozzarella or Swiss cheese – just use your favorite cheese!
- Toppings – load it up with lettuce, tomato, red onion and pickles

Recipe Variations
Mix up your sandwich by making one of the other Chicken Salad recipes I have! Here are my favorites:
- CSC Sassy Scotty – add cheddar, bacon & ranch
- CSC Cranberry Kelli – Carol with dried cranberries and slivered almonds
- CSC Fancy Nancy – it sure is fancy when you add fruit like fuji apples, grapes and crushed pecans
- CSC Fruity Fran – similar to the Nancy but replace the pecans with pineapple (and I liked it much better!)
- CSC Dixie Chick – like the Carol but add minced onions
- CSC Olivia’s Old South – adds eggs and sweet pickles
- Sonoma Chicken Salad – just like the one at Whole Foods!
- Panera Napa Almond Chicken Salad – grapes & almonds

How to make Chicken Salad Melt Sandwich
It may seem simple but making a melt can be tough! You want the croissant to be warm and the cheese to melt – but you don’t really want to chicken salad to be hot. So here’s how you do it:
- Couple Hours Before: In a medium bowl, stir chicken salad ingredients together and refrigerate
- Preheat oven to Broil – Low and line a rimmed baking sheet with parchment paper
- Slice Croissants and open. Lay on baking sheet.
- Add 1/2 cup chicken mixture to each croissant.
- Lay 1 slice provolone on top of chicken salad and on top of open face of croissant and repeat for all sandwiches.
- Place baking sheet in oven for 2-3 min until cheese melts and croissant is toasted. Watch closely as broil it can go from toast to burnt in a minute!
- Remove and add toppings and serve with chips and broccoli salad!

Tips, Tricks & FAQs
Store leftovers in an airtight container (I like these glass ones) in the refrigerator or wrap in aluminum foil for 1-2 days. Reheat in the air fryer at 250º for 3-4 minutes.
I like to use the paddle tool on a mixer for the perfect shredded chicken!
Sprinkle chicken breasts (or chicken tenders) with salt & black pepper and air fry for 12-15 min at 360º until internal temp is 155º. Let rest for 10 min and shred.
You might want to lightly butter the outside of the bread if using bread and toast it in the oven for 2 min on broil before adding the chicken salad and cheese.
Uh – you could make it like a grilled cheese in a skillet – but it’s so much easier in the oven so the chicken salad doesn’t fall out the sides.

Here’s a variation that my hubby and I love for all kinds of sandwiches – Use Garlic Butter Texas Toast. Toast it, (so its hot) then load it any way you want, top with cheese, broil – voila! A melt my hubby asks for seconds of. Or… yes, I use the garlic butter texas toast as the bread for a baked (or sometimes a non-baked) sandwich. It’s an amazing way to switch up a sandwich.
